My favourite Christmas Things


I love Christmas. If we're lucky, we'll have some snow. Despite all the inconvenience and problems it causes, for me, snow really makes Christmas seem – well, more like Christmas! (This is a picture of the old windmill near where I live and where I enjoy walking my dog on Christmas day.) I love all the preparations, from baking the Christmas cake and making the special sherry trifle, to decorating the house and Christmas tree.  I don’t like starting Christmas preparations too early, but once I start I find it really exciting.

I like to try Christmas traditions from other cultures and I was excited to find this yummy recipe for Coquito which is Latin eggnog! And boy, let me tell you, it is YUMMY!

Coquito is traditionally served in Puerto Rico; made with rum, eggs, coconut milk, coconut cream, sweet condensed milk, cinnamon, nutmeg, and cloves.

YOU NEED:
2 cans coconut cream
1 can sweetened condensed milk
1 can evaporated milk
1 teaspoon vanilla extract
2 1/2 cups of rum
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
(MAKE WITHOUT RUM FOR THE KIDS AND IN CASE YOU'RE OUT CAROLING IN THE SNOW..CAUSE YOU WILL GET LOST IF YOU'RE DRINKING THIS STUFF!!!)

(HOW WE MAKE EGGNOG ON MY FARM IN TEXAS!!!)

Blend it all in a blender on high and serve with ice! This is very strong but so yummy so be careful! TIP: SIP THIS BY THE FIRE AND CUDDLE WITH THE ONE YOU LOVE!!
And what better to go with Coquito than Eggnog Fudge? My kids love to help me make this!

Christmas Down Under with Skhye Moncrief. Warm Cheery Rum Fudge!

Well, it’s beginning to somewhat look a lot like Christmas Down Under.  Seriously, it’s hot here. You know, Australia is in the Southern Hemisphere. Right? *wink* So, it’s summer and there are Christmas trees in the shops. I’ve been worried about finding a Christmas tree.  I didn’t ship my Christmas things to Australia. We’re on a short-term assignment (that could extend up to 4 years) and we were only allowed a small air shipment. So, I had to triage. Well, we’re making these bells I saw Martha Stewart make…And some Poinsettia tissue-paper flowers to put on the tree. My daughter has made both before. So, why not! She’s into making things. But I will be making my signature holiday fudge as always…And thought I’d share!

Warm Cheery Rum Fudge

3 cups semi-sweet choc. chips (you can substitute ½ with milk choc. chips)
1-14 oz. can of sweetened condensed milk
A dash of salt
1 teaspoon fresh grated orange zest
Handful of walnuts
A greased loaf pan
1. Melt 3 cups of choc. chips with the sweetened-condensed milk and dash of salt over low heat.
2. Remove from heat and quickly add rum extract, orange zest, and walnuts. Mix fast.
3. Pour into a greased loaf pan. Cool.

An Italian Christmas Memory

I’m excited to be a part of Sky’s Christmas event this year! To celebrate, I thought I’d share a favorite Christmas memory—it involves a summer romance, a family making a wish come true, and making love in Italy.

This memory is from 1991. I was a college senior who had fallen in love with her college boyfriend the summer before senior year started. Only problem was, her boyfriend, a junior (*gasp* a younger man! LOL) was going abroad to Italy for the year at the end of August. We were determined to make it work. Oh, the money we gave to AT&T and the postal service during the fall semester! Then, come November, we had a crazy idea. What if I could get the money to fly to Italy over Christmas break???

Let’s hear from Beth…

Cutting the Christmas tree ourselves is a significant tradition that dates back to the years before I was married, with the whole family going together to select and cut it. The ranks have grown considerably over the decades and even included Chinese guests who found trekking off to cut an evergreen rather fascinating, as they did the concept of stuffing a large tree into our house and decorating it with eclectic baubles, like the glittered light bulbs our son made when he was in first grade, or the dough angel with glasses my brother created when he was ten. But they joined in the merriment.

In recent years, we venture to our favorite tree farm on a hillside outside the tiny hamlet of Singers Glen with our children and grandchildren, the youngest just wee tots. The little people are especially excited by our outing and a good time is had by all. The ultimate challenge is finding the candy cane tree and requires tramping up and down the scenic hill. To mix things up, my art major graduate daughter, Elise, suggested we get the ugliest tree we could find for our household and see what we could do with it. Six-year-old Ian thought this was a great idea. However, after he’d helped cut it, he asked, “Dad has out tree, right?” He didn’t want to get stuck with a dud.

I love Christmas!

There, I said it. Why, you ask? Well…

First of all, there are the Christmas markets. I grew up surrounded by towns and villages with stunning Christmas markets running from a short weekend to the whole month of December. Yes, sometimes even beyond Christmas. It must be worth their while setting up that ice rink, after all. A warm glow spreads through towns - and through your blood as you sip from your steaming mug of mulled wine. Colourfully decorated stalls sell handmade crafts, pottery, needlework and Christmas cookies. And, of course, plenty of stalls selling delicious food, so you can keep up your strength as you browse the dizzying variety of potential presents. Add a sprinkling of snow, and it’s a picture perfect setting.

Christmas is the most wonderful time of the year. I know the song…and yes, I hope to have planted the tune inside your head with my words.

Here in California we don’t have the icy temperatures or the snow laden trees. No, we often walk around in flip-flops and short-sleeved shirts. This is the time of year to replace our windshield wipers for the rare rainstorm that might blanket the world with green.

For those of us celebrating the season in temperatures dipping into the 50’s and not reaching into the 50’s…don’t work yourselves up and put your home for sale. Wintering in a higher temperature does several things for the holidays that you might not think of.

First… That lack of cool temps… yeah well, that means the cozy Christmas fire is often not needed. That’s why they have that darn ‘Yule log’ on the TV. All the snap, crackle and pop without the heat.

Second… When was the last time you saw Santa land his sleigh on anything other than dirt? Nuff said on that!

Third… The kid table is supposed to be in the living room… NOT on the patio.

Let’s hear from Michelle…

It’s hard to believe it’s that time of year again! Christmas is here. And it seemed like we just got through with summer. It astounds me at how fast the time flies. Even more so when I look at my son and how fast he’s growing up. Wasn’t he just born, like, yesterday?

But anyway. This post is about Christmas. The day after Thanksgiving is the day my husband and I have designated as Decorate For Christmas day. We’ve started collecting the little Victorian village buildings and our new thing is to buy a new one each year.  He also likes to buy a Waterford crystal ornament every year. I think it’s these little traditions that help make the holiday so magical.

But what I love most about Christmas is getting together with my large clan. We’re a horde. I have two sisters and a brother, they’re all married, they have children and their children have children. There are nearly thirty of us and that’s just my immediate siblings, nieces and nephews.

So as you can imagine things can get kinda crazy around the holidays. It’s darn near impossible to get us all together on the same day. We usually end up having whatever the holiday is AFTER the official holiday. Like this year, Thanksgiving for us is the Saturday after Thanksgiving. Then we all converge on my mom’s house because she’s the most centrally located (we’re all spread out). And we all bring a covered dish and have WAY too much food and stuff ourselves silly.

In recent years, because we’ve grown so big and most of the kids aren’t little anymore, we’ve started drawing names. The rule is anyone over the age of 18 gets their name thrown in the hat. This is great fun actually and it saves a ton of money because there is just no way everyone can buy for everyone. We’re not independently wealthy (not yet anyway).

Happy holidays everyone! I’m so happy to be here with Sky celebrating our busiest, most mystical and magical time of year. Sky asked us to share thoughts or memories of the holidays and I’d like to tell you about my very early Christmas in Vienna, Austria. I was only about three, but I remember it so well. In Vienna at that time, they had a holiday tradition that brought not only Saint Nicholas out into the streets, but also the frightening beast-like Krampus. While Saint Nick gives children presents, Krampus gives them switches and coal and is said to take a particularly bad child back to his lair for Christmas Dinner--and they are the feast!

On the day I remember, Saint Nicholas and Krampus came to our door! Krampus bellowed in German, “Are there any bad children here?” I hid behind my mom as she assured him that all the children in our household (me) were very, very good. And so Saint Nicholas gave me two cookies. One looked like him and one like Krampus.  I had a good friend -- a Viennese boy named Heinrich. I wanted to share my cookies with him. I looked carefully, and made a fateful decision. I gave Heinrich the Saint Nick cookie and I kept Krampus. Even then I must have known that the villains are often the most interesting characters! Hmm, I wonder if that choice molded my character.  LOL

I’ve had a good time writing holiday stories in my short career. Last year I created a quirky book called Mistletowed with a cast of seven characters who mix and match under the influence -- maybe-- of some magical mistletoe. This year, I’ll be introducing my new book, Snow Balls, in time for the holidays. While the book isn’t truly a “holiday” story, it does take place during the holidays so I got to include the famous Ahwahnee Hotel in Yosemite at Christmas time. This year, I also have a fun and unexpected holiday story called, Be Bad, for Goodness Sake. It’s my first ever MF love story.

I hope all of us have the best holiday yet! Full of laughter, bounty, and most of all, LOVE!

Christopher “Kit” Merchant is a metrosexual. Though he’s great at his job in product marketing for a high tech firm, he loves fashion, grooming, design and planning parties. Sadly, he also loves the CEO of his company, Elizabeth “Bett” Harding, who is nine years older, ten times richer, and has a big successful CEO as a boyfriend. When Bett asks Kitt to plan the big company holiday party at her house, he’s thrilled. Maybe she’ll come to see him as eligible. But when Bett’s boyfriend finds them together in bathrobes sipping wine, Kit discovers Bett thinks he’s gay. On top of that, the boyfriend is trying to take over Bett’s position as CEO “for her own good”. Some serious holiday magic is required. Who doesn't LOVE a dog at Christmas time? Okay, cat lovers maybe -- but seriously, I just attended a tree lighting ceremony in Reston, Virginia, and saw a lot of dogs with their loving owners. If I'd brought my dog, I would have put his jingle bell collar on! Anyway, because I love dogs, and because I took in a rescue dog (a Lhasa Apso-mix) to be company for my Malti-poo, I wrote SANTA PAWS as a Christmas Novella.

Here's what it's about:

The last thing Lacey Gordon—divorced with a teen daughter and two cats—needs is a rescue dog coming into her life. To top it off, she's rooked into a "Get Under the Mistletoe by Christmas Eve" dating contest. Since Buddy the dog prefers to be the only "new guy" in Lacey's life, will Santa Claws ruin her holiday for good?

Because my year has been topsy-turvy like Lacey's (my daughter moved to a different state for a new job!), I've had to "skimp" on the holiday prep. But it's okay, because we still enjoy the little things like going to a tree-lighting, driving around to see Christmas lights, enjoying some mint mocha together -- the cookies will most likely come from the bakery this year. But I'd love to share one of my mom's favorite recipes, and one of the easiest to make too!

NUTTY CHOCOLATE "TOFFEE" BARS

2 sticks butter or margarine, at room temperature
1 cup firmly packed light brown sugar
 1 1/2 teaspoon pure vanilla extract
2 cups all purpose flour
1/2 teaspoon salt

CREAM butter and sugar together, add vanilla and mix in flour and salt to make "dough" -- spread on bottom of jelly roll pan. (Line pan with foil if you wish)... BAKE for 20-25 minutes at 350 degrees, till golden brown. IMMEDIATELY TOP WITH 1 pkg semi sweet chocolate chips (milk or dark, your choice! Nestle or Hershey)  -- SPREAD WHILE COOKIE LAYER IS HOT. Top with 1 cup finely chopped walnuts. Let cool before cutting into squares. YUM!!! These cookies will freeze beautifully too.

EXCERPT:

The afternoon wore on, and the only bright spot was a cryptic text message from her daughter. She preferred talking on the phone. Texting was convenient, although she had to chunk up their cell phone plan to unlimited messages and web access for Deena. The girl seemed to spend hours on that Smart phone. Was that a good thing, being so hooked into the ‘net? Lacey’s guilt was already high given the divorce. She had no idea if Deena did her homework in the hours between getting home and Lacey’s return from work.

Lacey eyed the phone’s screen, skeptical, trying to puzzle out the message’s meaning. ‘Dad drove me home from skl, brt sprize, cant wait 2 see u & him 2gthr.’ Why would Deena be excited for her to see Todd? She understood and sympathized with Lacey about the reasons for divorce. She never made excuses for her father, and seemed disappointed when he didn’t come through for her. Odd that Todd drove Deena home. But what did ‘brt sprize’ mean? It couldn’t be ‘bought.’ He didn’t usually buy Deena any surprises. Unless he brought a check for his belated child support. She hoped so.

Lacey could go grocery shopping Saturday—uh oh. She’d promised to think about attending the ‘dating contest’ at Fresh Grounds. She did love their mocha lattes. Hm. She hurried through the rest of the paperwork piled on her desk, turned off her lamp and computer, then ran into April on the way out to the parking garage. The elevator’s chill set them both shivering.

“I’ve got you down for noon at Fresh Grounds.”

“Why so early? I thought you had the whole afternoon reserved.”

“You’re quality, remember.” April dashed to her truck.

Lacey clutched the top of her coat together to shield against the bitter wind. Two days till Saturday. Anything could come up and sabotage her plans. She hurried to her car in the growing dusk, grateful to see the sunset courtesy of Daylight Savings. Then again, mornings were pitch black. Lacey drove toward home, half-listening to the news, hoping Todd wouldn’t ruin her evening. And that she didn’t get stuck in traffic. Pure luck she zipped home in half an hour.

And nearly ran down a burly man in a Sherpa jacket and baseball cap, walking a dog across the street. Not just any dog, but a beige and white pit bull. Lacey shivered. She pulled into the condo complex in relief. Home, sweet home. Even if it was a bit cramped compared to a house in the ‘burbs where she’d spent her marriage. The frame and brick condominiums, surrounded by tall oaks and maples, had four two-story units joined together with a one-story ranch on the side. Most neighbors here were retired, walking their dogs through the narrow streets and parking lots to the woodier paths beyond the complex.

But she cursed aloud seeing Todd’s car in her sheltered parking spot. Lacey warned him the last time not to do that. He never listened. Not now, not back when they’d been married—until she dangled a satin thong in his face. Lacey had found them stuffed in his jacket pocket, and refused to listen to his half-hearted, lame excuses. He hadn’t fought the divorce. Perhaps he preferred running around, since he’d been doing just that since high school. Why hadn’t she realized that long ago? Trust was important to her.

Not to him.

She slung her briefcase over one shoulder and walked around her condo to the front door. Lacey fumbled for her keys in her purse. Her briefcase slipped off her shoulder, its hefty weight dragging her down, and her feet burned inside her new pumps. She heard an odd scratching sound. That couldn’t be the cats. They weren’t at the window as usual, watching for birds.

“Deena? Is that you?”

Lacey unlocked the door. Once she opened it, a hairy beige dog barreled into her, knocking her onto her bottom, spilling her briefcase and purse into the snow. She shrieked, her backside aching, one shoe on and one shoe off. Lacey stared in horror when the dog lifted his leg and piddled in an arc over her leg. A few warm wet drops dribbled on her pantyhose.

Deena appeared in the doorway and clapped a hand over her mouth. “Buddy! Bad dog—oh, Mom, he’s really very sweet. Just wait till you—no, Buddy!”

Lacey watched the dog snatch her purse and duck between her daughter’s legs, then race inside the house and up the carpeted steps. Leaving a trail of muddy footprints.

For All Who Have Lost Someone Close. A Christmas Post.


Merry Christmas!

It’s hard to believe that December 25th has finally arrived. It’s been a fabulous month here at A Writer’s Mind. My What Every Woman Wants Beneath Her Christmas Tree blog event has once more been a pure pleasure to host. Sixteen authors and jewelry vendors have visited and shared some truly wonderful Christmas tales. I would like to thank each and every one of them for joining me this holiday season. You ladies are the best! I'd also like to thank everyone who has popped in and commented. It meant so much.

I thought long and hard about what I wanted to share today and decided that I'd rather be honest and shoot from the heart... this Christmas is a bit difficult.

As many know, I lost my Dad at the end of July and Christmas without him is… not quite Christmas. It was very important to me this year to try to keep things as normal as possible. For the sake of my son. For the sake of my mom. For the sake of myself.

There’s a certain joy that Christmas offers. A bittersweet nostalgia. Memories that though they hurt can also be healing. The lights, the warmth, the tradition of it all.

In fact, everything has gone quite well this holiday season. As far as everyone knows, I kept a dry eye. Until today at the store. I picked up a candle and thought to myself, “Time to buy a Christmas card for mom!” So off I strolled with a smile on my face, a bounce in my step, simultaneously sniffing the Warm Apple Pie candle and pushing my cart until I arrived at my destination, the card section. Not thinking twice, I reached up and grabbed a ‘Mom & Dad’ Christmas card. Eyes round as saucers, I froze.

Mom and Dad?

Regrettably, no.

Yep, I had a mini break-down. I quickly hustled away to the soda isle where I buried my tears by studying the ingredient label of a Diet Coke bottle. Let me tell you, there are some alarming things in soda. Suffice it to say, I quickly pulled myself together. No need for tender moments mere feet from so much carbonation. Shoulders back, determined gait full steam ahead, I went right back to that card isle and picked out the perfect Christmas card for my MOM.

Life goes on and I truly believe the worst disservice we can do to those who we’ve lost is to cease doing the little 'normal' things because they’re not right there with us anymore. After all, I think they still are with us. We just can’t see them. But we can feel them. I think Dad was right there with me telling me to pull myself together and stay strong. That I should celebrate Christmas with his memory close to my heart.

Dad, I love you. Though I can’t ‘give’ you anything for Christmas this year I hope that this, your favorite Christmas song, reaches you wherever you may be…
